And who said I can’t snack at 2:30 am?
I was talking to Lyle on the phone when I felt the hunger pangs. Well, I was not surprised because my only meal yesterday was dinner which consisted of grilled chicken breast and wing and a cup of white rice.
My dad usually buys healthy snacks in case somebody needs a quick fix between meals so I checked my fridge for something to nibble on. Nothing but whole wheat buns and a rotting apple.
Dinner yesterday was rather heavy at approximately 588 calories (346 from the grilled chicken and 242 from the medium-grain white rice) so I wasn’t too keen on having a whole wheat bun. A wheat bun isn’t my idea of an appetizing early morning snack and although I know snacking on fruit is a smart choice, I will never eat a rotting apple. LOL.
Lucky for me, the girls at home left some cut-up salad veggies chilling in the downstairs fridge. So, at the 2:30 a.m., I feasted on vegetable salad tossed in thousand island dressing.
A serving of tossed vegetable salad has about 80-110 calories and a tbsp. of thousand island dressing has 70 calories so all in all, my early morning snack was still below 200 calories. Guilt-free and very appetizing.

… me, i need to gain weight..
You are so busy, that’s why. Methinks you need to slow down a bit and eat more. You’re quite picky when it comes to food, yes?
[...] When I’m at home, I always try to snack on something healthy. Gone are the days when I would finish a large bowl of spicy instant noodles with a healthy serving (read as: 2 cups) of brown rice. When I get really hungry after hours of surfing the internet, I do snack on something healthy. Check out the evidence here and here. [...]
